Easy Weekday Meals- Using ArugulaI love making healthy meals from what I have on hand; this week I had a ton of delicious arugula. Last night I made a tasty meal with it by baking tilapia filets over yellow squash and arugula. I topped the tilapia with fresh salsa and served it with a side of quinoa.
Simply, layer and bake at 350 for about 25 minutes!
I also used some arugula with breakfast! A simple omelet with arugula, salsa, and a bit of lo-fat mozzarella made for a great post HIIT meal.
